Cookbook Challenge: Day Eleven...Finally!

To start out the last week of the Cookbook Challenge, I made Pork Stir-Fry with Mushrooms and Asparagus from How to Cook Without a Book. I actually realized when I went to cook dinner that this was supposed to be a chicken recipe. Oops. Nothing wrong with a little improvising though! Plus, I hadn't had pork in a while.

It turned out to be pretty good and was fairly easy to throw together! This was kind of a no-brainer though. Almost all of the ingredients are favorites in this house. The flavor of the sauce was delicious too. All that went into it was chicken broth, lemon juice, lemon zest, soy sauce and sugar. It gave the pork and especially the mushrooms the best flavor. Unfortunately, the leftovers are reserved for Chris. Now that he is on swing shift, he takes the previous night's leftovers to work for dinner. I think he'll really like this one.
