One more day!
Part of me wishes this challenge would have ended today. I would have loved to go out on a high note! Tonight I made Szechwan Chicken Noodle Toss from the Taste of Home cookbook.
It was so good! I even "healthied" it up a bit by using wheat pasta. I'm telling you, if you don't like wheat pasta, but you don't like the not-so-healthiness of white pasta make this recipe! You can't even tell it is wheat.
I didn't have any stir-fry sauce so I had to improvise. I used soy sauce, cooking wine, chicken broth, red pepper flakes, sugar, and a little bit of flour to thicken things up. It turned out great!
Tomorrow is the last night of my Cookbook Challenge, and I will be making Lean-Bean and Cheese Enchiladas.
